Mais ce sont les cocktails qui marquent vraiment les esprits. La Raw Chilli Paloma est un chef-d'œuvre d'équilibre, avec une chaleur de scotch bonnet qui ne submerge pas mais ajoute au contraire une profondeur savoureuse aux notes d'agrumes acidulées. La White Pine Negroni est tout aussi impressionnante, offrant un profil de gin forestier avec de l'akvavit suédois qui est complexe sans être prétentieux.
