Les frères Huitric apportent leur expérience de la ferme à Guérande de manière authentique, sans effet de mode. On ne sert pas juste de la bonne nourriture, on sert de la nourriture qui a du sens, des légumes de saison aux vins naturels sélectionnés avec soin. L'œuf parfait est un incontournable, tout comme la polpette de porc qui prouve qu'on n'a pas besoin de techniques compliquées pour créer quelque chose d' mémorable.
