Chef Endo doesn't just serve sushi; he narrates it, walking you through the provenance of each ingredient, the technique behind every cut, the philosophy guiding each piece. The machiai seating area, inspired by tea ceremonies, sets the tone before you even taste a single bite. You'll find monkfish from Brixham, tuna from Spain, and rice from Yamagata—all sourced with military precision. The experience is intimate, almost meditative, with the chef's charm and knowledge making you feel like you're in on a secret.

The only caveat: the restaurant is currently closed due to a fire, so you'll need to wait for it to reopen. But when it does, this will be one of London's most compelling omakase destinations. It's not for the casual diner who wants a quick bite or a noisy night out. This is for those who want to sit, listen, and let the food speak for itself.
