Chef Pierre-Michaël Martin (aka Pimousse) serves up blind menus that keep you guessing—and delighted—with dishes like herbaceous mimosa eggs, sweetbreads with celery and smoked eel, and ravioles of black pork from Bigorre. It's inventive, natural cooking with bold flavor combinations that sometimes hit the mark (monkfish with hare jus à la royale) and sometimes go a bit too far (chocolate curry, we're looking at you). The experience is worth the time commitment—expect around 3.5 hours for the full tasting menu—but be prepared for service that can feel a bit uneven. The wine list is solid, the atmosphere is bright and spacious, and if you're craving something memorable and different from typical bouchon fare, this is your spot.

Creative quayside dining with bold flavors

Chez Pimousse is Lyon's answer to creative, boundary-pushing cuisine—and it mostly delivers. Chef Pierre-Michaël Martin's blind menus are a gamble worth taking: you'll encounter herbaceous mimosa eggs, sweetbreads with celery and smoked eel, and ravioles stuffed with Bigorre black pork. The monkfish with hare jus à la royale is perfectly cooked and audaciously combined, though the chocolate curry dessert feels like it tried too hard. The quayside location offers a lovely view, and the bright, spacious dining room feels modern without being cold.

Service can be a bit hit-or-miss, and the seven-course tasting menu does take time (plan for 3.5 hours), but if you're looking for something beyond traditional Lyonnais bouchon fare, this is where you'll find it. The wine list is well-stocked and pairs nicely with the food. It's not perfect, but it's definitely one of the more interesting dining experiences in the city.

Chez Pimousse, c'est la réponse lyonnaise à une cuisine créative qui ose. Les menus dégustation aveugles du chef Pierre-Michaël Martin valent le coup : œufs mimosa herbacés, ris de veau au céleri et anguille fumée, ravioles au porc noir de Bigorre. Le saint-jacques au jus de lièvre est parfaitement cuit et audacieux, même si le dessert au chocolat et curry semble avoir trop voulu faire. La vue sur les quais est agréable, et la salle lumineuse et spacieuse donne un air moderne sans être froide.

Le service peut être irrégulier, et le menu dégustation en sept services prend du temps (prévoyez 3h30), mais si vous cherchez autre chose que les bouchons traditionnels, c'est ici qu'il faut aller. La carte des vins est bien fournie et s'accorde bien avec les plats. Ce n'est pas parfait, mais c'est l'une des expériences culinaires les plus intéressantes de la ville.
