Chapter One est l’un de ces restaurants qu’on planifie à l’avance, ceux qui méritent qu’on organise sa soirée rien que pour eux. Dès qu’on pénètre dans la salle du sous-sol, on est immédiatement transporté dans un univers où chaque détail a été pensé, de l’art irlandais exposé aux murs au service impeccable. Le chef Mickael Viljanen maîtrise parfaitement l’équilibre entre technique française et produits locaux : le homard de Donegal est d’une subtilité rare, et les ris de veau sont cuits à la perfection. Ce qui m’a le plus marqué, c’est l’ambiance chaleureuse et accueillante, malgré le prestige des deux étoiles Michelin.
Le café irlandais est une expérience à ne pas manquer, servi avec une touche théâtrale directement dans la salle. C’est la touche finale parfaite pour un repas déjà exceptionnel.
