Achilli Enoteca al Parlamento is the real deal when it comes to Roman fine dining with soul. You walk into this place and immediately feel the weight of history—literally, with those 18th-century wine cellars you can access. The service strikes that perfect balance between professional and warm, the kind of attentiveness that makes you feel like you've been coming here for years even if it's your first visit.

Chef Pierluigi Gallo's kitchen delivers food that respects Roman traditions while adding contemporary finesse. The tasting menus are worth the splurge, especially if you pair them with something from their legendary wine collection.
