Pavé is the place that arguably kicked off Milan's modern all-day café scene, and years later it still sets the standard. The space on Via Felice Casati is bright and inviting, with an open kitchen where you can watch the team work dough and shape pastries in real time. Two display cases catch the morning light — one stacked with tarts and modern cakes, the other with focaccia, flaky brioche sandwiches, and some of the best viennoiserie in the city. The coffee cake is fantastic, the toasties are excellent, and the coffee is consistently good across the board.
Mornings are all about brioches and cappuccini, but from noon to 3pm the kitchen opens up for stuffed focaccia sandwiches that are worth rearranging your day around. Everything is produced in-house in their artisan lab — from dough to packaging — which gives the whole operation a transparency and quality you can taste. There's table service, which is a nice touch, and sidewalk seating when the weather cooperates.
