The experience begins upstairs with stunning views of the Firth of Forth, where you're greeted with a curated selection of aperitifs and Champagnes alongside chef-prepared snacks at the central counter. The real magic happens downstairs in the main dining room, where a 10-course tasting menu unfolds in front of an open kitchen. Chef Stuart Ralston and his team showcase Scotland's finest ingredients, particularly their line-caught fish and sustainable shellfish from the Scottish Isles. The creativity here serves flavor first, with dishes like wild halibut and Scottish langoustines that let the quality of the produce shine.
The atmosphere strikes a perfect balance between refined and approachable - the staff are genuinely friendly and happy to chat about the dishes, making you feel like you're part of the culinary process. At £185 per head for dinner, it's definitely a special occasion restaurant, but the quality and execution justify the price tag. The Good Food Guide gave it an "Exceptional" rating, and it's already been named Restaurant Newcomer of the Year by Food & Travel Magazine.
