Just off Cours Julien, Prosper is the kind of place that feels like a secret only the locals know. This former dive bar has been given a gentle facelift with white and bottle-green walls and exposed stonework, but it still keeps its heart and soul intact. The French-British duo behind it (both from Frenchie) serve up bold, fiery Mediterranean dishes with Spanish influences—think squid-ink rice with octopus, skate wing terrine with pepper sauce, and that addictive baked mussels with crumble topping. It's Bib Gourmand for a reason: great quality, great value, and a vibe that's lively without trying too hard.
Bold flavors, lively vibe
Prosper hits that sweet spot between a neighborhood bistro and something a bit more special. You walk in and immediately feel the energy—it's busy, loud enough to be fun, but not chaotic. The food is where it really shines: bold flavors that don't overstay their welcome. The squid-ink rice with grilled octopus is a standout, and those baked mussels with the spiced crumble? Dangerous. They're doing everything right with the wine list too, featuring natural and biodynamic options from France and Argentina without the pretension. It's the kind of place you'll find yourself coming back to, maybe for a quick drink on the terrace or a full dinner with friends. The only real downside is that it gets packed, so booking ahead is essential, especially in summer when they run two sittings.
