Fringe has been a Haut Marais fixture since 2016, and it's easy to see why it's stuck around. The coffee is the real deal — single-origin, roasted right there, and pulled with care by baristas who actually know what they're doing. The space itself is minimal and bright, with rotating photography exhibitions on the walls that give it a gallery-cafe feel you won't find anywhere else in the neighborhood. It's the kind of place where freelancers camp out with laptops during the week, and brunch crowds take over on weekends.

The food side is solid if not expansive: think cookies, cinnamon and cardamom buns, granola, and a few vegan cake options (the banana bread gets mentioned a lot). Plant-based milk is available, and ingredients are sourced from local farmers, mostly organic. Some reviewers on HappyCow note the vegan pastry selection could be broader — often just one vegan cake on offer — so don't come expecting a full vegan bakery spread. The cold-pressed juices are a nice touch if you're skipping caffeine.

Weekends get busy, especially around brunch time, and the space isn't huge so you may wait for a seat. Go on a weekday morning if you want the calm version with a table to yourself. Hours are a bit unusual — they close at 5pm on weekdays and 6pm on weekends — so this is strictly a daytime spot. That said, for a morning coffee or a lazy weekend brunch in the 3rd, Fringe is one of the best calls you can make.
